Really Healthy Dinner Recipe

Yesterday I went out shopping and I splurged on this little salmon steak, because I love salmon and I cook it only once every few months or so (because it is so expensive over here). But when I have it, ooooh I love it!

So, here I was with my salmon steak, trying to come up with a really healthy dinner recipe that would tie in with my healthy diet weight loss.

Well, to be honest I was really proud of what I came up with! I think after eating this my body went into overdrive from having too much good stuff! ;)

This is what I used:

  • baby spinach leaves (watch out Popeye!)
  • avocado
  • grape tomatoes (I like grape tomatoes better than cherry tomatoes, but of course you can use any)
  • red onions
  • one cooked salmon steak (best would be to grill it, of course, but I can’t get past the buttery taste you get when frying it in butter and oil in the pan – don’t forget to soak up any excess with a paper towel after frying, though!)

So I just “draped” the spinach leaves around the bottom of the plate, then added the grape tomatoes (halved)  and avocado and placed the fried salmon on the top. Then I sprinkled the red onion and the dressing over it. Really simple!!

Here is my dressing – I love it, and it is very easy to make and you can make a big batch and then keep it in the fridge for a while. Now this is quite a “fatty” dressing which you should only use if you don’t eat any carbohydrates with your meal:

  • Half your favorite mayonnaise
  • half sour cream
  • crushed garlic
  • add some fresh herbs if you want to (I had mixed a salad sauce from a packet a few days earlier and had that left in the fridge, so I decided to use it up by mixing it with the dressing, that’s why it’s so green) – very often I just have the three ingredients mayonnaise, sour cream and garlic and that’s it, it tastes fantastic and you can use it for all sorts of things (Garlic Sauce for wraps for example).

The trick with this sauce is to not use too much as it is quite rich, but because it has quite an intense taste you can get away with using less.

There you have it, my really healthy dinner recipe. I mean, what could be healthier than spinach and salmon??? :) Enjoy!

      @Sean, baby spinach is something really yummie, even my kids eat it, if I put it in a wrap or so…

      @Usman, I don’t think so! The dressing I maks sort of melts over the salmon, and the salad vegetables (tomatoes and avocados) make it more moist, too.

    I can’t help but notice, even from the movies, that veggies are a HUGE part of every American/European family meal except for breakfast. This is the kind of meals I’d love to change to but Nigeria is so carb obsessed and veggies and fruit can be quite expensive over here. I do miss those carrot sticks diet, I and my girlfriends embark on while holidaying in London.

    Salmon here is a little expensive although I have a very lucky friend who lives in the highlands of bonnie Scotland and they can fish for free in a nearby valley that is jammed with the most beautiful salmon.

    Maybe I will ask him to bag me a few !

    The carrot stick diet is something I and my girlfriends embarked on while on vacation in London 2 years ago. We had eaten so much and added some unnecesary weight so we decided to do something about it.
    If memory serves me right, we decided to embark on the carrot stick diet after watching Tyra Banks say she quit the modelling industry cos she was sick of eating carrot sticks to keep the weight off.

    The diet involved counting enough calories to keep our energy levels up while keeping the fat at bay and losing some of the accumulated ones. Calories were divided into 3 – 6 daily meals with carrot sticks and tea for snacks in between each meal. Meals were made up of low GI carbs and loads of fibre rich veggies (chopped carrots included).

    Since we hated the gym (I still do) we opted to get some cheap diet pills from Hollands and Barrets (being low on funds spoilt the whole fun) and daily abdominal workouts. In the 1st and 2nd week, the pain caused by the aching ab muscles helped curb excessive eating cos any slight gastric distention provoked a mild muscular pain that meant, “Quit eating now! You’ve had enough.”

    The abdominal exercises also helped to curb constipation and bloatedness giving an elusion of a trim fit figure in no time.

    So there it is. What I refer to as the carrot stick diet. It ain’t fascinating but I was able to lose 11 pounds in 3 – 4 weeks and would have lost more if I had gotten off my a*s and hit the gym ;) .

    NOTE: You could turn a bit orange if you snack on too much carrots. The pigments they contain can accumulate over time. In my case it wasn’t quite noticeable.

    Hi Petra,

    You’ll have to visit the great Pacific North West where I am) or Alaska to really get as much salmon as you like.

    Your recipe is great and I wouldn’t mind trying it. I’d just go easy on the mayonnaise.

    I’m sure you are aware how healthy the cold water fish like salmon are. The goodness of omega 3 etc.

    Sadly, farmed salmon is not nearly as good as the wild salmon. Even here in big stores they now sell usually the farmed salmon.

    But going to my friend store I can still get wild salmon. It is also available at fishermen wharf and some fish markets.

    Once you taste the wild salmon you will likely demand it and stay away from the farmed variety.

    Simple yet mouth-watering recipe. Me too I really love salmon. Not only are they healthy with omega-3 fatty acids but tasty as well. I don’t eat it often too, mostly during festive seasons because it’s very expensive from where I come from but when I do, I enjoy it a lot. I like it grilled or pan fried with some butter, garlic, herbs, salt and pepper. Thanks for that nice recipe.
